Leftover Turkey Salad Sandwich

A lot of people like to eat turkey on Thanksgiving and ham on Christmas. Sometimes you have both. If so, chances are that you have a lot of leftover turkey in your refrigerator. Are you thinking about making sandwiches with the left overs? Here is a new spin on traditional and sometimes dry turkey sandwiches. 

Chances are you have heard of or have made Chicken Salad Sandwiches before. But have you ever made Turkey Salad Sandwiches before? They are tasty  and easy to make too! Recipe yields 4-6 servings. 

Leftover Turkey Salad Sandwich


8 slices whole grain bread, toasted
8 slices of reduced fat cheddar cheese
2 green onions, chopped (2 tablespoons)
1 ½ cups diced cooked turkey
½ cup diced unpeeled apple
½ cup Greek yogurt, plain
¼ cup sliced almonds
½ cup chopped grapes
1 ½ teaspoon garlic salt
¼ teaspoon pepper 

Combine ingredients except for the bread in a medium bowl. Toast bread. Put a generous layer of the mixture on the bread, top with sliced cheddar cheese if desired. Top with more bread. Yields 4-6 servings. Enjoy!
