15 Quick and Easy Breakfast Ideas

How many times growing up have you heard, "Breakfast is the most important part of the day?" Well, it turns out that your mother was correct.

Eating a proper breakfast helps break the night time fast and gets your metabolism cranking for the day. Going without a proper breakfast can set you up for fatigue and hunger just a short time after. Fueling up with complex carbs and a little bit of protein as soon as possible, ignites your brain to help you think clearer, and sends glucose as energy to your muscles.
To get your day started off right, here are 15 Quick and Easy Breakfast Ideas:

1.  Bell Pepper Egg-in-a-hole

2. Portable Pancake Pocket Recipe (I use whole wheat pancake batter for this one, serve with Greek yogurt on top or on the side for dipping).

 3. Ham and Egg Cups

8   slices deli ham
4  tablespoons shredded reduced-fat sharp Cheddar cheese
1 green onion, thinly sliced
8 eggs, large
Salt and pepper to taste

Preheat the oven to 400 degrees F. Coat eight muffin cups with cooking spray. Set aside. Position one slice of ham in each of the muffin cups, doubling each slice over to insure that there are no holes in the bottom of the ham "cups." Sprinkle 1/2 tablespoon of the cheese and about 1/2 tablespoon scallions in the bottom of each cup. Place one raw egg in each ham cup. Sprinkle each egg lightly with pepper. Bake for about 15 minutes or to desired degree of doneness. Carefully remove the egg cups using the ham to lift onto serving plates.

 4. Easy Colorful Zucchini Frittata (This one takes a little more time but can be cooked in the microwave.)

4 cups diced zucchini
1 small onion, diced
6 eggs
1 cup (4 ounces) reduced fat shredded cheddar cheese
1 garlic clove, crushed
½ cup diced tomatoes
¼ cup green bell peppers
¼ cup red bell peppers
Salt and pepper to taste

In a 9-inch microwave-safe pie plate, combine the onion and zucchini. Cover and microwave for five minutes on high or until tender. In a bowl, mix together the cheese, ham, eggs, salt and pepper. Pour over zucchini mixture. Microwave for 15-20 minutes or until a knife inserted comes out clean. Some microwaves may vary. Yields six servings.
Other simple ideas if your in a hurry:

 5. Whole wheat waffles (buy frozen) with fruit and honey (use blueberries, banana, etc). Can even top with walnuts or slivered almonds.
6. Greek yogurt with slivered almonds
7. Greek Yogurt with fruit and/or granola
8. Toast smothered with peanut butter and topped with bananas and honey
9. Banana and peanut butter smoothie (blend banana, peanut butter, milk, and a little honey)
10. Peanut Butter Banana Quesadillas
11. Avocado with toast
12. Berries and/or spinach blended up in a protein shake
13. Greek yogurt blended up with berries
14. Oatmeal topped with fruit and peanut butter blended in for a protein boost. Add honey or agave nectar to taste. Cinnamon is optional. Can use plain instant oatmeal packets as well.
15. Cut up an apple (or other fruit such as banana, berries, etc)  and add to plain instant oatmeal. Sweeten as you like. Add butter and vanilla extract (optional). You can even add cinnamon to the apple, or unsweetened cocoa. Oatmeal is very versatile.

Is boxed cereal, your go to due to lack of time or the need to go shopping? Just add some nutritional value by adding raisons, banannas, and some sume almonds or walnuts.

  4. Wow easy breakfast ideas, you just reminded me are just 5-10 minutes of prep, and you can have a really nutritious breakfast in just a few minutes. :)
