Easy Ways to Stretch Your Dollar

Making a second meal or sides from leftovers is a great way to stretch your money.

There are several ways you can stretch your dollar by using ingredients you already have on hand.


1. Use leftover meat such as chicken, turkey, or hamburger meat in casseroles, tacos, stir-fries, soups or chili. Don't want to use them right away, freeze them or later. Having precooked meat in the freezer helps save you time for those busier nights. Leftover chicken can be used on sandwiches, make a chicken salad sandwich. Chicken or ham can be added to beans and leftover vegetables. Add broth or stock and you have vegetable soup.

2. Leftover rice can be used in soups or casseroles. Vegetable soup can be poured over rice or in burritos. You can even use the leftover rice to make fried rice or you can cook fried rice with vegetables and a beaten egg.

3. Leftover vegetables can be added to soups/stews, through them in a crock pot, added to salads, omelets, or casseroles.
