No Bake Energy Bites

Here is a great protein-packed snack that will help hold you or your kids over until meal time, especially if you have activities that you have to run to. Warning, they are really hard to stop eating! My family loves these and I have to make sure they don't eat them all at one. This protein packed snack contains flaxseed which is one of the richest plant sources of the Omega-3 fatty acid alpha-linolenic acid ALA. 

This recipe is so versatile! For the first batch, I used a little less oats and added one large scope of vanilla protein powder. However, there is enough protein in these bad boys that I typically do not use protein powder. 

The second batch I made were just as good and did not have any protein powder in it but had the full serving of oats. 

No Bake Energy Bites

1 c. dry oatmeal...

1c. toasted coconut flakes
½ c. dark chocolate chips
½ c. peanut butter
½ c. ground flaxseed
1/3 c. honey
1tsp. vanilla
*Substitution ideas can be found for any of these ingredients. You can substitute wheat germ instead of flaxseed. Some other fun substitutions for the chocolate chips (or in addition to them) could include:
• Chopped dried fruit
• Raisons
• Dried berries (cranberries, cherries, etc.)
• Chopped almonds, pecans, or sunflower seeds

*A scoop of protein powder can also be added if you want a little more of a proten boost. Just make sure your energy bites are not too dry. 

Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you want. Store in an airtight container and keep refrigerated up to 1 week. Enjoy, because they won't last long around your house!
