10 Healthy or Almost Healthy Pumpkin Recipes

Its that time of year again, to pumpkin everything! I am going to jump on the band wagon and provide you with some yummy pumpkin recipes. Everything is okay in moderation, and its okay to splurge occasionally,  but because you train hard, these recipes will be healthy or heathified so that you won't feel as guilty if you go on a pumpkin craze :) .

Pumpkin is so healthy for you. Pumpkin is actually considered a type of winter squash. Winter squash give your immune system an added boost since one cup contains 145 % of the daily value of beta-carotene, which is coverted by your body into the antioxidant vitamin A which helps fight disease, keeps the mucous membranes in your mouth and nose resistant to infection. Just one cup also provides 30 % of the recommended daily value of vitamin C, which also helps to fight winter respiratory onfections and free- radicals released during exercise. Now that is a great reason to eat more pumpkin!


Every year, I like to make pumkin butter. Its low-fat and my kids love it on their toast for breakfast. I have been slacking and haven't made it this year yet. Many thanks to Gina's Skinny Recipes for this recipe.

 
Low-Fat Pumpkin Butter

3 1/2 cups pumpkin puree, or 1 (29 oz.) can
2 tsp vanilla extract
3/4 cup apple cider or juice
1 cup packed brown sugar
2-3 cinnamon sticks
1-2 tsp pumpkin pie spice
 
Combine pureed pumpkin, vanilla, apple juice, spices, cinnamon sticks and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 - 40 minutes or until thickened. Stir frequently. Adjust spices to your taste. Makes 3 3/4 cups.

Pumpkin Shake
 
6 oz. almond milk
6 oz vanilla greek yogurt
1/2 cup pumpkn puree (canned pr homemade)
Dash of cinnamon
 
1. Place ingrediants in blender and blend for 45 seconds. Enjoy!
